The best choice I ever made when it comes to long-term storage food is getting a freeze dryer. I didn’t always think that. It was far more work than I imagined and the maintenance on the machine is annoying when it needs it.

This new Industrial Pump rarely needs to have the oil changed or filtered. The pump has a gas ballast feature that makes it so water does not stay in the oil. Because of this, the oil in the pump will be pristine and clear, even after 30 or more batches.

Drying things out played a roll as well as the added insulation. The condensation on the front panel around the seal had water running down the front of the Freeze Dryer constantly during the entire cycle, not just the freeze cycle. I initially went into the FDer to simply stop the humdity from reaching the outer chamber shell and freezing.

“Astronaut” ice cream is a fun treat to make and is so easy. Just scoop ice cream onto the trays and freeze before processing.

I, too, have noticed a website significant difference when I defrost mid-cycle. I do that routinely now. I carefully use a heat gun to "shock" the surface of the ice, moving back and forth across it fairly swiftly, which causes it to crack and separate somewhat from the cylinder.
